Mix dry ingredients
In a medium bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Make the batter: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined—small lumps are fine. Do not overmix. Let the batter rest 5 minutes while you preheat the griddle.
Add-ins (optional)

Prepare add-ins: If using banana, slice into 1/4-inch rounds. If using blueberries or chocolate chips, measure into small bowls so they're ready to add to the batter on the griddle.

Incorporate or sprinkle: You can either fold a small amount (1–2 tablespoons) of your chosen add-in into the batter for even distribution, or add the add-ins directly to each pancake on the griddle after pouring the batter (recommended for even distribution of fruit or chips).

Portion batter: Using a 1/3-cup measure (or a large spoon), pour batter onto the hot griddle to form pancakes about 4–5 inches across. For three pancakes, pour three portions spaced evenly.

Add add-ins (if not folded in): Quickly scatter desired add-ins (banana slices, blueberries, or chocolate chips) onto the top of each pancake portion. Use roughly 1–2 tablespoons of add-ins per pancake (0.5 cups total for all three).

Cook first side: Cook until bubbles form on the surface and edges look set, about 2–3 minutes. The underside should be golden-brown when you lift an edge with a spatula.

Flip and finish: Flip the pancakes and cook the second side until golden and cooked through, about 1–2 minutes more. Adjust heat if pancakes are browning too quickly or too slowly.

Keep warm: If making ahead or stacking, keep finished pancakes warm in a single layer on a baking sheet in a 200°F (95°C) oven for up to 15–20 minutes.

Serve: Plate the three pancakes. Top with extra butter if desired and serve with maple syrup. Offer additional add-ins on the side if the customer wants to add more.
