Grilled onions

    Caramelize onions

    Heat a large skillet over medium heat. Add 1 tbs olive oil and 1 tbs butter. When butter melts, add the thinly sliced onion, 1/2 tsp salt and 1/4 tsp pepper. Cook, stirring occasionally, for 15–20 minutes until onions are deeply golden and softened. Reduce heat if they begin to brown too quickly. Remove from pan and keep warm.

Sausage patties

    If using raw breakfast sausage formed into 8 patties: heat a separate skillet over medium heat, add 1 tbs butter (optional) and cook patties 4–6 minutes per side until internal temperature reaches 160°F (71°C). If using pre-cooked patties, heat them in a skillet or oven until warmed through, about 4–6 minutes.

Eggs

    Scramble eggs

    Crack 8 eggs into a bowl, add 1 tsp salt and 1 tsp pepper, and whisk until combined. Heat a nonstick skillet over medium-low, add 2 tbs butter and swirl to coat. Pour eggs into pan and allow to set slightly. Stir gently with a spatula, folding the eggs until softly set but still moist, about 3–4 minutes. Remove from heat.

Country gravy

    Make gravy

    Use a clean saucepan over medium heat. Add 3 tbs butter and 2 tbs sausage drippings (if using) and melt. Whisk in 3 tbs flour and cook, stirring constantly, 1–2 minutes until the raw flour taste cooks out and mixture is bubbling but not browned. Gradually whisk in 2 cups whole milk, bringing mixture to a gentle simmer. Cook 4–6 minutes, whisking frequently, until thickened to a pourable gravy. Season with 1 tsp salt, 1 tsp freshly ground black pepper and 1/2 tsp hot sauce (optional). Taste and adjust seasoning.

Assembly & finish

    Preheat oven to 350°F (175°C) if you want to melt cheese over all sliders at once. Split 8 slider buns and place bottom halves on a baking sheet or serving platter if assembling individually.

    Place one warmed sausage patty on each bottom bun. Top each patty with a portion of scrambled eggs (about 1 egg per slider) and sprinkle roughly 2 tbs shredded cheddar cheese over the eggs. Top with a spoonful of grilled onions.

    If desired, cover sliders with top buns and place assembled tray in the preheated oven for 3–5 minutes until cheese melts and buns are warmed. Alternatively, melt cheese under a broiler for 1–2 minutes—watch closely to avoid burning.

    Spoon warm country gravy over individual sliders or serve gravy on the side for dipping. Garnish with an extra crack of black pepper to taste.
