Method

Waffle Batter

    Preheat and prep

    Preheat a Belgian waffle iron according to manufacturer instructions. Lightly brush or spray the iron with a small amount of melted butter to prevent sticking.

    In a large mixing bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

    In a separate bowl, lightly beat the eggs. Add the whole milk, melted butter (cooled slightly so it doesn't cook the eggs), and vanilla extract and whisk until homogenous.

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix — a few small lumps are fine. Let the batter rest for 5–10 minutes to hydrate the flour and improve texture.

Cooking Waffles

    When the waffle iron is fully preheated, brush the grids with a little melted butter. Use a ladle or measuring cup to pour batter into the center of the iron — amount will vary by iron size (about 3/4 to 1 cup for standard Belgian irons).

    Close the lid and cook according to the waffle iron's instructions until the waffle is golden brown and crisp, about 4–6 minutes. Avoid opening the iron early to check, as this can cause sticking or tearing.

    Carefully remove the waffle with tongs or a fork and transfer to a wire rack in a warm oven (200°F/95°C) if making multiple waffles to keep them crisp. Repeat buttering the iron and cooking remaining batter.

Toppings and Assembly

    For strawberries & whipped cream option: Toss sliced strawberries with 1–2 tablespoons of maple syrup (optional) and let sit 5 minutes to macerate. In a chilled bowl, whip the heavy cream with powdered sugar to soft peaks to make whipped cream. To serve, place a warm waffle on a plate, spoon macerated strawberries over it, and finish with a generous dollop of whipped cream.

    For banana & walnut option: Arrange sliced banana over a warm waffle, sprinkle toasted chopped walnuts on top, and drizzle with maple syrup. Optionally add a pat of butter.

    Classic serving: Serve Belgian waffles hot with butter and warm maple syrup, and offer optional sides (strawberries & whipped cream or banana & walnut) for the additional $2 upcharge.
