1. Prepare the Pickled Red Onions
Slice the red onion thinly and place it in a bowl. In a separate bowl, mix vinegar, sugar, salt, and add the sliced onions. Let them marinate for at least 30 minutes.
2. Fry the Capers
In a small pan, heat a small amount of oil over medium heat. Add the capers and fry until they are crispy, then remove and let them drain on paper towels.
3. Prepare the Tuna
Using a sharp knife, slice the fresh tuna into very thin slices. Arrange them on a serving plate in a single layer.
4. Assemble the Carpaccio
Drizzle lime leaf oil over the tuna slices. Scatter the fried capers and chopped pistachios on top. Finish with pickled red onions, and season with salt and pepper to taste.
