Cook the Bacon
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
Add Potatoes and Broth
Add the cubed potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat and let simmer for about 10-15 minutes, or until the potatoes are tender.
Add Corn and Shrimp
Stir in the corn and shrimp, cooking until the shrimp turns pink and opaque, about 3-5 minutes.
Stir in Cream and Seasoning
Add the heavy cream and Cajun seasoning to the pot. Stir well and season with salt and black pepper to taste. Heat through for another 5 minutes.
Serve
Ladle the chowder into bowls and garnish with crispy bacon and green onions. Serve hot.
