Prepare the Coconut-Lime Granita
In a medium saucepan, combine coconut milk, lime juice, and sugar. Heat gently over low heat, stirring until sugar is dissolved. Remove from heat and let it cool down.

Freeze the Granita
Once the mixture is cool, pour it into a shallow dish and place it in the freezer. Every 30 minutes, use a fork to scrape and stir the mixture until it becomes fluffy and granular. This process should take about 2-3 hours.

Prepare the Thai Chiles
While the granita is freezing, finely chop the Thai chiles. If you prefer a milder flavor, you can remove the seeds before chopping.

Shuck the Oysters
Carefully shuck the fresh oysters using an oyster knife. Place them on a serving platter filled with crushed ice to keep them chilled.

Serve the Oysters
Top each oyster with a spoonful of coconut-lime granita and a sprinkle of chopped Thai chiles. Garnish with fresh marigold petals for an elegant touch.
