Prepare the Pickled Apple
Start by preparing the pickled apple which will add a refreshing tang to the salad. Thinly slice the apple and place it in a small saucepan.

Remove from heat and let the apple slices cool in the pickling liquid for at least 30 minutes.

Prepare the Crispy Leeks
While the apples are pickling, prepare the leeks. Clean them thoroughly, then slice them thinly into rings.

Heat the oil in a deep frying pan over medium-high heat. Once the oil is hot, add the sliced leeks in batches, frying until golden brown and crispy, about 2-3 minutes.

Remove the leeks from the oil and drain on paper towels. Season lightly with salt.

In a large bowl, tear the gem lettuce into bite-sized pieces and place it in the bowl.
