Cooking Instructions
- 1
Cook the Ziti
Bring a large pot of salted water to a boil. Add the ziti pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Sauté the Pancetta and Onions
In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Add the diced onion and sauté until translucent, about 3-4 minutes.
- 3
Add Garlic and Spices
Stir in the minced garlic and red pepper flakes. Cook for an additional minute until fragrant.
- 4
Deglaze with Vodka
Pour in the vodka and simmer for about 2-3 minutes, allowing the alcohol to cook off.
- 5
Make the Sauce
Add the crushed tomatoes to the skillet and stir to combine. Simmer for about 10 minutes, then stir in the heavy cream. Season with salt and black pepper to taste.
- 6
Combine with Pasta
Add the cooked ziti to the sauce and toss to coat evenly. Stir in the chopped basil just before serving.
- 7
Serve
Serve hot, garnished with additional basil and grated Parmesan cheese if desired.
