Prepare the Shrimp
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Sauté the Shrimp
Add the shrimp to the skillet, season with salt and black pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and are cooked through.

Add Vegetables
Stir in the chopped artichoke hearts and sun-dried tomatoes. Cook for an additional 3-4 minutes until heated through.

Melt the Cheese
Sprinkle the shredded Fontina cheese over the shrimp and vegetables. Cover the skillet and let it cook for another 2-3 minutes until the cheese is melted.

Serve
Remove the skillet from heat. Serve the sautéed shrimp mixture with a generous dollop of basil pesto mayonnaise on top.
