Prepare the Marinade
In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, lemon zest, and lemon juice. Mix well to form a marinade.

Marinate the Pork
Place the pork loin in a large resealable plastic bag or a baking dish. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roast the Pork
Remove the pork from the marinade and place it in a roasting pan. Roast for about 25-30 minutes per pound, or until the internal temperature reaches 145°F (63°C).

Rest and Serve
Once cooked, remove the pork from the oven and let it rest for 10-15 minutes before slicing. Serve with your choice of sides.
