Prepare the Steak
Season the ribeye steak with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side or until desired doneness. Remove from the skillet and let it rest for a few minutes, then slice thinly against the grain.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and bell pepper, and sauté for about 5-7 minutes until they are softened and slightly caramelized. Season with salt and pepper to taste.

Assemble the Sandwich
Place a hoagie roll on a plate. Layer the sliced ribeye steak on the bottom, then add the sautéed onions and peppers. Top with slices of provolone cheese or pour cheese sauce over the top.

Melt the Cheese
If using provolone cheese, place the sandwich under a broiler for 1-2 minutes until the cheese is melted and bubbly. If using cheese sauce, simply pour it over the sandwich.

Remove from the oven, let cool slightly, and serve hot.
