Prepare Cookies
Choose your favorite cookie type (Chocolate Chip, Peanut Butter, or Cowboy) and bake them according to the recipe until they are golden brown. Let them cool completely.

Assemble Ice Cream Sandwiches
Take one cookie from your chosen batch and place a generous scoop of your selected ice cream on the flat side. Top it with another cookie, flat side down, to form a sandwich.

Freeze
Place the assembled ice cream sandwiches on a baking sheet and freeze for at least 30 minutes to firm up the ice cream.

Serve
Once the sandwiches are firm, remove them from the freezer and serve immediately. Enjoy your homemade ice cream sandwiches!
