Cheese Making Directions

  1. 1

    Prepare the Milk

In a large pot, heat the whole milk over medium heat until it reaches about 190°F (88°C), stirring occasionally to prevent scorching.

  2. 2

    Add Vinegar

Remove the pot from heat and stir in the white vinegar. Let it sit for 5-10 minutes until curds form.

  3. 3

    Strain the Curds

Using a slotted spoon, gently scoop out the curds and place them in a colander lined with cheesecloth. Allow the whey to drain for about 5 minutes.

  4. 4

    Add Salt and Rennet

While the curds are still warm, sprinkle salt over them and add the rennet. Gently mix to combine.

  5. 5

    Knead the Curds

Transfer the curds to a clean surface and knead them with your hands until they become smooth and elastic. You can dip your hands in ice water if the curds are too hot.

  6. 6

    Form the Mozzarella

Shape the kneaded cheese into balls and place them in a bowl of ice water to cool and set.

  7. 7

    Store the Cheese

Once the mozzarella has cooled, it can be stored in the refrigerator in a container with some whey or fresh water to keep it moist.
