Make the Tomato Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the Italian plum tomatoes, salt, and black pepper. Bring to a simmer and cook for 20-25 minutes, stirring occasionally, until the sauce thickens. Remove from heat and stir in half of the fresh basil leaves.

Assemble the Dish
Spread the tomato sauce evenly over a pizza base. Arrange the slices of fior di latte mozzarella on top. Bake in a preheated oven at 220°C (425°F) for about 12-15 minutes or until the cheese is bubbling and golden.

Garnish and Serve
Remove the pizza from the oven and let it cool slightly. Garnish with the remaining fresh basil leaves and additional black pepper if desired. Slice and serve warm.
