    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 8-10 minutes. Drain excess fat.

    In the same pan used for the sausage, add the fresh spinach. Sauté until wilted, about 3-4 minutes. Season with salt and pepper.

    In a large mixing bowl, combine the ricotta, mozzarella, Fontina cheese, caramelized onions, cooked sausage, and sautéed spinach. Mix until well combined.
