Add Acid
Once the milk is heated, remove it from the heat and stir in the white vinegar or lemon juice. Let it sit for 10-15 minutes until curds form.

Separate Curds and Whey
Line a colander with cheesecloth and set it over a bowl. Carefully pour the curds and whey into the colander to drain. Let it drain for about 30 minutes.

Rinse and Salt
Rinse the curds under cold water to remove excess whey and cool them down. Transfer the curds to a bowl and mix in the salt.

Mold the Cheese
Transfer the curds into a cheese mold or a small container, pressing down to compact the cheese. Cover and refrigerate for at least 2 hours.

Store and Age
After the cheese has set, you can store it in a brine solution (1 cup salt to 4 cups water) or simply in the fridge for up to a week. It can also be aged longer for more flavor.
