    In a saucepan, crush the Italian plum tomatoes with your hands or a fork and bring to a simmer over medium heat. Season with salt and black pepper and cook for 15-20 minutes until slightly thickened.

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook slowly, stirring occasionally, until they become golden brown and caramelized, about 20-25 minutes.

    Assemble the Dish

    Preheat your oven to 450°F (232°C). Spread a layer of the tomato sauce on a baking dish. Add a layer of mozzarella cheese, followed by caramelized onions, sun-dried tomatoes, and dollops of basil pesto on top.

    Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and golden.
