Prepare the Coffee Syrup
In a bowl, combine the brewed espresso and dark rum. Stir well and set aside to cool.

Make the Chocolate-Mascarpone Mousse
In a large mixing bowl, whisk together the mascarpone cheese, powdered sugar, cocoa powder, and vanilla extract until smooth and creamy.

Whip the Cream
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate-mascarpone mixture until well combined.

Assemble the Tiramisu
Slice the vanilla sponge cake into layers. Dip each layer quickly into the coffee syrup, making sure not to soak them. Place the first layer in a serving dish.

Layer the Mousse
Spread a layer of the chocolate-mascarpone mousse over the soaked sponge. Repeat the process with remaining layers, finishing with the mousse on top.

Chill and Serve
Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Before serving, dust with cocoa powder and sprinkle grated dark chocolate on top.
