    Prepare the Ingredients

    Gather all the ingredients and prepare the vegetables by slicing and chopping as necessary.

    Cook the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy. Remove the pancetta and set aside, leaving the fat in the skillet.

    Sauté the Vegetables

    In the same skillet, add the chopped onion, green bell pepper, and sliced mushrooms. Sauté until the vegetables are tender, about 5-7 minutes. Add the minced garlic and cook for another minute.

    Cook the Chicken

    Push the vegetables to the side of the skillet and add the chicken breasts. Season with salt, black pepper, and dried oregano. Cook for about 5-7 minutes on each side, until golden brown.

    Add Tomatoes and Stock

    Add the crushed tomatoes and veal stock to the skillet. Stir everything together and bring to a simmer. Reduce the heat to low, cover, and let cook for 20 minutes, or until the chicken is cooked through.

    Cook the Pasta

    Meanwhile, cook the spaghetti or ziti according to package instructions. Drain and set aside.

    Once the chicken is cooked, return the pancetta to the skillet and stir. Serve the chicken cacciatore over the cooked pasta and garnish with chopped parsley.
