    Prepare the Bacon

    In a skillet over medium heat, cook the honey-pepper bacon until crispy. Remove and drain on paper towels.

    Form the Patty

    Shape the ground chuck into a burger patty, about ¾ inch thick. Make a small indentation in the center to prevent puffing during cooking.

    Grill the Patty

    Preheat the grill to medium-high heat. Grill the patty for about 4-5 minutes on each side, basting with chipotle BBQ sauce during the last minute of cooking.

    Add Cheese

    Place the smoked gouda cheese on top of the patty during the last minute of grilling to melt.

    Assemble the Burger

    Toast the burger bun lightly on the grill. Layer the bottom bun with lettuce, followed by the grilled patty with cheese, bacon, tomato, pickles, and red onion. Top with the other half of the bun.

    Serve immediately with your choice of sides.
