    Chill glass

    Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to chill. Discard the ice water just before assembling.

    Fill a cocktail shaker with a handful of ice (about 4–6 large cubes). Add the gin, fresh lime juice, and simple syrup to the shaker.

    Shake vigorously for 8–10 seconds until the shaker feels cold to the touch. This chills and lightly dilutes the spirit and syrup for balance.

    Fill the chilled highball/Collins glass with fresh cubed ice (about 1 cup). Strain the shaken gin-lime mixture over the ice.

    Top with chilled Voss sparkling water (about 3 oz). Pour gently to preserve carbonation and stir once very gently with a bar spoon to combine—one slow stir through the drink is sufficient.

    Express the oils from a lime wheel over the drink by holding the wheel skin-side down and giving it a gentle squeeze above the surface, then rim the glass with the wheel and drop it into the drink.
