Prepare strawberries
Rinse the strawberries thoroughly under cold running water. Remove stems and any bruised or damaged parts. Pat dry with a clean kitchen towel or paper towel.

Macereate (optional, for better flavor)
Place the hulled strawberries in a medium bowl. Sprinkle the granulated sugar over them and gently toss to coat. Let sit at room temperature for 10–15 minutes until the strawberries release some juice. (If you prefer a less sweet or quicker method, skip this step and add sugar later.)

Blend
Add the strawberries (and any juices released during maceration) and 1 cup of the water to a blender. Blend on high until smooth, about 30–60 seconds. If your blender struggles, pulse and scrape down the sides as needed.

Strain (optional for clear juice)
If you want a smoother, seed-free juice, pour the blended mixture through a fine-mesh sieve or cheesecloth into a large pitcher, pressing with the back of a spoon to extract as much liquid as possible. Discard or reserve the solids for another use (smoothies, jam). If you prefer a pulpy juice, skip straining and proceed.

Adjust consistency and flavor
Add the remaining 1 cup of water to the strained or unstrained juice to reach desired concentration. Stir in the fresh lemon juice. Taste and adjust sweetness: add additional sugar, 1 teaspoon at a time, stirring until dissolved, if desired. If you macerated with sugar earlier, you will likely not need more.

Chill and serve
Refrigerate the juice until well chilled, about 30 minutes, or serve immediately over ice. Fill glasses with a few ice cubes each, pour the strawberry juice, and garnish with mint leaves if using. Stir before drinking if separation occurs.
