Passion Fruit Cheesecake Recipe

    Prepare pan

    Preheat the oven to 350°F (175°C). Grease the bottom and sides of a 9-inch (23 cm) springform pan and line the bottom with parchment paper.

    Combine graham cracker crumbs, sugar and salt in a medium bowl. Pour in melted butter and stir until evenly moistened and the mixture holds together when pressed.

    Press the crumb mixture firmly and evenly into the bottom (and slightly up the sides if desired) of the prepared springform pan using the bottom of a measuring cup or glass to compact it.

    Bake crust for 8–10 minutes until set and fragrant. Remove from oven and let cool while preparing the filling. Reduce oven temperature to 325°F (160°C).

Cheesecake Filling

    Bring all filling ingredients to room temperature for at least 30 minutes (this prevents lumps and overbeating). Preheat oven to 325°F (160°C) if not already set.

    In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the room-temperature cream cheese on medium-low speed until smooth and free of lumps, about 2–3 minutes. Scrape down the bowl.

    Add the granulated sugar and cornstarch and continue to beat on medium speed until combined and slightly creamy, about 1–2 minutes. Scrape down the bowl again.

    Add eggs one at a time, beating on low speed and scraping down the bowl between each addition. Beat just until each egg is incorporated; avoid whipping air into the batter.

    With the mixer on low, add sour cream, heavy cream, vanilla extract, lemon zest, passion fruit puree/pulp, and optional passion fruit juice. Mix until the batter is smooth and uniform in color and texture, about 30–45 seconds. Do not overmix.

    Pour the filling over the cooled crust in the springform pan. Tap the pan gently on the counter to release any large air bubbles. Optionally, run a thin knife around the inside edge of the pan to smooth the filling.

    Prepare a water bath (bain-marie): wrap the outside base of the springform pan in a double layer of heavy-duty aluminum foil to prevent leaks. Place the wrapped pan in a large roasting pan. Carefully pour enough hot water into the roasting pan to come about halfway up the sides of the springform pan (about 1–1.5 inches).

    Bake in the preheated 325°F (160°C) oven for 50–65 minutes, or until the edges are set and the center still slightly jiggles when the pan is gently shaken. Avoid overbaking; residual heat will finish setting.

    Turn the oven off and crack the oven door open. Let the cheesecake cool in the oven for 1 hour (this helps prevent cracking).

    Carefully remove the cheesecake from the water bath and remove foil. Cool completely at room temperature for 1–2 hours, then refrigerate for at least 6 hours or preferably overnight (8–12 hours) to fully set and develop flavor.

Passion Fruit Glaze / Topping

    About 30 minutes before serving (or after the cheesecake has chilled), make the glaze. In a small saucepan combine 1/2 cup passion fruit pulp, 2 tablespoons sugar, and 1 tablespoon water. Stir to combine.

    Bring the mixture to a gentle simmer over medium-low heat, stirring occasionally. Taste and adjust sugar if needed for desired sweetness/tartness.

    In a small bowl, mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir the slurry into the simmering passion fruit and cook for 30–60 seconds until slightly thickened. Do not overcook; the glaze should be glossy and pourable when warm and will thicken slightly as it cools.

    Remove from heat and let the glaze cool to room temperature. If you prefer a seedless topping, strain the glaze through a fine mesh sieve and press with a spoon to extract the pulp (reserve seeds for garnish or mix back in for texture).

    When ready to serve, pour or spoon the passion fruit glaze over the chilled cheesecake, allowing some to drip down the sides if desired. Return to refrigerator for 10–15 minutes to set the glaze slightly.

Finish & Serve

    Run a thin knife around the edge of the cheesecake to loosen, then release and remove the springform ring. Transfer to a serving plate if desired.

    Top with dollops of whipped cream, fresh passion fruit halves and mint leaves as garnish. If using reserved passion fruit seeds, sprinkle a few on top for visual texture and extra tartness.

    Slice with a hot, clean knife (dip the knife in hot water and wipe dry between cuts) for clean slices. Serve chilled.
