Tea

Method

Tea

  1. 1

    Bring water to a boil

In a kettle or medium saucepan, bring 1.5 liters of water to a rolling boil.

  2. 2

    Steep the tea

Place 6 teaspoons loose black tea (or 6 black tea bags) into a heatproof pitcher or large heatproof container. Pour the 1.5 liters of just-boiled water over the tea. Cover and steep for 5 minutes for a standard-strength unsweetened tea (steep 4 minutes for lighter, 7 minutes for stronger).

  3. 3

    Remove tea leaves or bags

After steeping, strain out the loose tea or remove the tea bags. Press gently on the tea bags or leaves with a spoon or spatula to extract remaining liquid, then discard the leaves/bags.

Cooling & Serving

  1. 4

    Cool briefly

Let the brewed tea sit at room temperature for about 10–15 minutes to stop the cooking process and reduce heat before refrigeration. Leaving it covered prevents contamination.

  2. 5

    Dilute and chill

Pour the warm tea into a large pitcher and add 1.5 liters of cold water to bring the tea to serving temperature and adjust strength. Stir gently to combine. Place the pitcher uncovered or loosely covered in the refrigerator until thoroughly chilled, about 1–2 hours.

  3. 6

    Serve

Fill glasses with ice cubes (about 1/2 cup to 1 cup ice per glass). Pour chilled unsweetened tea over ice. Garnish with optional lemon slices and mint sprigs if desired. Serve immediately.

  4. 7

    Storage

Keep leftover iced tea refrigerated in a covered pitcher for up to 3–4 days. Do not sweeten until serving if you want to control sweetness per glass.
