Prepare tea

    Heat water

    Heat fresh water to just below boiling, about 175–185°F (80–85°C). If you don't have a thermometer, bring to a simmer and let stand 1 minute.

    Measure tea

    Place 2 teaspoons of loose leaf green tea into a teapot, infuser, or tea cup with an infuser. Use approximately 2 tsp per 8 oz (240 ml) cup.

    Steep

    Pour 8 oz (240 ml) of the heated water over the tea. Steep for 2–3 minutes for a light, fresh flavor. For a slightly stronger cup, steep up to 3.5 minutes. Avoid steeping longer than 4 minutes to prevent bitterness.

    Remove leaves

    Remove the infuser or strain the tea leaves promptly to stop extraction and prevent bitterness.

Finish & serve

    If desired, stir in honey to taste (start with 1 tsp) or add 1 tsp fresh lemon juice. Add 1–2 fresh mint leaves for an aromatic finish. Serve immediately while warm.

    If preparing iced green tea: allow the brewed tea to cool to room temperature (about 20–30 minutes), then pour over a glass filled with ice. Adjust sweetness or lemon after chilling.
