    Prepare and simmer

    Combine the coarsely chopped fresh ginger, granulated sugar, and 1 cup (240 ml) water in a small saucepan. Add the cloves if using. Bring to a simmer over medium heat, stirring until the sugar dissolves.

    Simmer to extract flavor

    Reduce heat to low and let the mixture simmer gently for 15–20 minutes so the ginger releases its flavor. Taste after 15 minutes and simmer up to 5 more minutes for a stronger ginger intensity.

    Strain and finish

    Remove the pan from heat. Stir in the fresh lemon juice. Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof bowl or jar, pressing on the solids to extract as much liquid as possible. Discard the solids (or reserve for another use).

    Cool and store

    Let the ginger syrup cool to room temperature, then refrigerate for at least 30 minutes. The syrup will keep in the refrigerator for up to 2 weeks in a covered container.

Ginger Ale Assembly

    Chill glassware

    Fill serving glasses with ice cubes to chill while assembling (optional).

    Mix drink

    For each 12-oz (about 360 ml) serving, pour 2 tablespoons (30 ml) of the prepared ginger syrup into the glass. Add about 180–240 ml (6–8 oz) chilled club soda or sparkling water depending on desired sweetness and fizz (the recipe quantities make roughly 2 servings). Gently stir once to combine.

    Adjust and garnish

    Taste and adjust: add an extra 1 teaspoon to 1 tablespoon of syrup for a sweeter, more gingery drink, or dilute with a little more soda if too strong. Garnish each glass with a slice of lemon or lime and a sprig of mint if desired.

    Serve immediately while fizzy. Keep remaining syrup refrigerated and extra soda chilled.
