    Prepare and preheat

    Position a rack in the center of the oven and preheat to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper leaving a 1-inch overhang on two sides for easy removal; lightly butter the exposed edges.

    Melt chocolate and butter

    Place the 0.75 cups butter and 4 ounces coarsely chopped semisweet chocolate in a heatproof bowl set over (but not touching) simmering water, stirring until smooth. Alternatively, microwave in 20-second bursts, stirring between bursts, until fully melted and glossy. Remove from heat and let cool for 3–5 minutes.

    Combine sugars and eggs

    Whisk the granulated sugar and packed light brown sugar into the slightly cooled chocolate-butter mixture until incorporated. Add the eggs one at a time, whisking vigorously after each addition until the mixture is glossy. Stir in 1 teaspoon vanilla extract.

    Add dry ingredients and nuts

    Sift or whisk together 0.75 cup all-purpose flour, 0.25 cup unsweetened cocoa powder, and 1/2 teaspoon fine salt. Fold the dry mixture into the chocolate batter with a spatula until just combined—do not overmix. Fold in the optional 1/2 cup chopped nuts if using.

    Bake

    Spread the batter evenly into the prepared 8x8 pan and smooth the top. Bake on the center rack for 20–25 minutes, or until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs (for chewy brownies). Rotate the pan halfway through baking for even color.

    Cool

    Remove the pan from the oven and let the brownies cool on a wire rack for at least 30 minutes to set. Use the parchment overhang to lift the brownies from the pan. For slightly warm a la mode serving, cool 15–20 minutes before assembling; for fully room-temperature brownies, cool completely and reheat slices briefly if desired.

Creamy Fudge Sauce

    Combine sauce ingredients: In a small saucepan over medium-low heat, whisk together 1/2 cup heavy cream, 1/4 cup brown sugar, 2 tablespoons unsalted butter, and 2 tablespoons unsweetened cocoa powder until the butter melts and the sugar dissolves.

    Simmer briefly: Bring the mixture to a gentle simmer (do not boil vigorously) and cook, stirring, for 1–2 minutes until slightly thickened and glossy.

    Add chocolate and finish: Remove the pan from heat and stir in 2 ounces finely chopped semisweet chocolate, 1 tablespoon corn syrup, 1/2 teaspoon vanilla extract, and 1/8 teaspoon salt. Stir until the chocolate is fully melted and the sauce is smooth. If the sauce is too thick, stir in 1–2 teaspoons of warm milk or cream to reach desired pouring consistency. Keep warm over very low heat or transfer to a small heatproof container and rewarm briefly before serving.

Assemble and Serve

    Portion brownies: Cut the cooled (or slightly warm) brownie into 4 equal squares using a sharp knife. For clean slices, warm the knife under hot water and dry between cuts.

    Plate and top: Place one brownie square on each dessert plate. Top each warm brownie with one large scoop of vanilla ice cream (or two small scoops if preferred).

    Sauce and finish: Spoon 2–3 tablespoons of the warm creamy fudge sauce over each ice cream-topped brownie so it cascades down the side. Optionally sprinkle a tiny pinch (about 1/8–1/4 teaspoon) of sea salt over each serving to contrast the sweetness.

    Serve immediately: Serve the brownie a la mode immediately while the brownie is warm and the ice cream is beginning to melt into the sauce for the ideal contrast of textures and temperatures.
