Method

For the juice

  1. 1

    Prepare apples

Wash the apples thoroughly under cold running water to remove wax and residues. Core each apple and cut into quarters. You may peel them if you prefer a clearer juice, but keeping the peel adds flavor and nutrients.

  2. 2

    Blend

Place the apple pieces into a high-speed blender. Add 1 cup cold water and 1 tablespoon fresh lemon juice. Blend on high until the apples are completely broken down and a pulpy mixture forms (about 45–60 seconds). If your blender is small, blend in two batches.

  3. 3

    Sweeten (optional)

Taste the blended apple puree. If you'd like it sweeter, add up to 1 tablespoon granulated sugar (or honey) and blend briefly for 5–10 seconds to combine. The lemon juice helps balance sweetness and prevents browning.

  4. 4

    Strain

Place a cheesecloth-lined fine-mesh strainer over a large bowl or jug. Pour the blended apple mixture into the strainer. Use the back of a spoon or a spatula to press and extract as much liquid as possible. For a clearer juice repeat straining through a fresh layer of cheesecloth or a coffee filter.

  5. 5

    Chill and serve

Transfer the strained apple juice to a pitcher, add ice cubes if serving immediately, or cover and refrigerate for at least 30 minutes to 2 hours to chill. Stir gently before pouring into glasses.

Optional clarifying and preserving

  1. 6

    Clarify further (optional)

If you want very clear juice, let the strained juice sit in the refrigerator for 1–2 hours so fine particles settle. Carefully decant the clear juice off the top, leaving sediment behind. Alternatively, filter through a coffee filter for 1–2 hours.

  2. 7

    Storage

Store fresh juice in a sealed container in the refrigerator for up to 48–72 hours. For longer storage, freeze in airtight containers for up to 3 months. Note: color and flavor will change over time.
