    Inspect and Chill

    Check oysters for tightly closed shells—discard any that are open and do not close when tapped. Rinse shells under cold running water to remove grit. Place crushed ice on a large platter or serving tray to create a stable bed for oysters.

    Shuck the oysters: hold oyster flat-side up in a towel or use an oyster glove. Insert an oyster knife at the hinge, twist to pop, run the blade under the top shell to sever the muscle, discard top shell, then slide knife under the oyster to free it from the bottom shell while retaining its liquor. Place each shucked oyster on the bed of crushed ice in its shell. Keep oysters cold until serving (no more than 1 hour before eating).

    Cut the lemons into wedges and arrange on the platter. Put forks and small bowls for mignonette and spicy sauce nearby. Optionally sprinkle a little sea salt on the ice bed to stabilize shells.

Classic Mignonette

    Combine the finely minced shallot and red wine vinegar in a small bowl. Add cracked black pepper and fine sea salt. Stir to dissolve the salt slightly and let the mixture sit at room temperature for 10–15 minutes to mellow and blend flavors. Taste and adjust salt or vinegar as desired.

    Spoon a small amount (about 1/2 tsp) of mignonette onto each oyster just before eating, or serve in a small bowl for guests to add themselves.

Spicy Citrus Sauce (optional)

    Whisk together fresh lime juice, hot sauce, honey, and a pinch of salt in a small bowl until honey is fully incorporated. Taste and adjust heat or sweetness. Serve in a small ramekin so guests can add a few drops to oysters if they like a spicy-citrus kick.

Grilled/Baked Option (optional)

    If you prefer warm oysters, preheat broiler or grill to high. Arrange shucked oysters on a baking sheet or on a grill-safe tray over medium-high heat on crushed ice replaced by foil to stabilize shells. Combine melted butter, minced garlic, and chopped parsley in a small bowl.

    Spoon about 1/2 tsp of the butter mixture onto each oyster and sprinkle lightly with grated Parmesan if using. Broil or grill 4–6 inches from heat for 3–5 minutes, until butter is sizzling and edges of oysters begin to curl slightly. Remove carefully with tongs and serve immediately.
