Prepare fish
If using a whole coral trout, remove guts and gills, reserve heads and bones; rinse thoroughly. If using fillets, reserve bones and skin trimmings (about 300 g) for stock. Pat fish flesh dry and refrigerate for finishing garnish.

Cold soak
Place the fish bones, heads, or trimmings in a large heavy-bottomed stockpot. Add the chopped carrot, onion, celery, leek, crushed garlic, parsley stems, thyme, bay leaves and peppercorns. Pour 2.5 L of cold water over the mixture and let sit 20–30 minutes in the refrigerator — this helps draw out blood and impurities for a clearer stock.

Simmer gently
Bring the pot to a gentle simmer over medium heat. As small bubbles begin to rise, reduce heat to the lowest setting so the surface barely moves. Skim any scum that rises for the first 10–15 minutes with a fine skimmer. Add the white wine and 2 tsp kosher salt. Simmer very gently, uncovered, for 25–30 minutes. Do not boil — boiling breaks proteins and clouds the stock.

Strain stock
Remove from heat. Strain the stock through a fine-mesh sieve lined with cheesecloth into a clean pot or bowl to remove solids. Do not press on solids — allow gravity to drain to keep the stock clear. Chill slightly if needed until lukewarm (about 30–40°C) before proceeding to clarification.

Prepare raft mixture
In a medium bowl, whisk together room-temperature egg whites and 125 ml cold water until frothy but not stiff. Stir in the finely chopped cold carrot, celery and onion. The cold vegetables add flavor and help form a stable raft.

Heat for clarification
Place the pot over medium-low heat and slowly bring to a very gentle simmer. Over 12–20 minutes the egg-white raft will coagulate, rise to the surface and trap impurities. Do not stir once the raft begins to form. If the raft cracks, gently patch it by spooning coagulated egg onto the gap.

Finish clarifying
When the raft is firm and the liquid below appears clear (test by carefully lifting a small area of raft), turn off the heat and let the pot rest 10 minutes to settle. Using a ladle, carefully make a hole in the raft and ladle the clear consommé through a cheesecloth-lined fine sieve into a clean container. For an extra-clear result, filter a second time through dampened coffee filter or very fine cloth.
Finishing & Garnish

Season and refine
Return the clarified consommé to a clean pot and gently warm to serving temperature (not boiling). Add 1 tbsp sherry or dry vermouth and 1 tsp fresh lemon juice. Taste and season with fine sea salt and white pepper to taste.

Prepare garnish
If using thinly sliced coral trout for garnish, slice very thinly and keep chilled. If using trout roe, portion small quenelles or teaspoons. Warm a small neutral-oil skillet briefly and quickly poach tiny slivers of trout (optional) for 10–15 seconds in simmering consommé to set; alternatively serve raw slices (as sashimi) chilled. Have microgreens or chervil ready.

Plate and serve
Ladle the consommé into warmed bowls. Place a few thin slices of coral trout or a small spoon of roe in the center. Add a few microgreens, a light drizzle (or single drop) of neutral oil for sheen if desired, and a final crack of white pepper. Serve immediately.
