Flounder & Marinade

Flounder & Marinade

    Prepare and marinate fillets

    Pat the flounder fillets dry with paper towels. In a shallow dish, whisk together 2 tbs neutral oil, lemon juice, minced garlic (1 tsp), 1 tbsp Vadouvan spice, salt (1 tsp) and black pepper (1/2 tsp). Sprinkle the activated charcoal powder (1 tsp) into the marinade and whisk until evenly dispersed (charcoal will give a dramatic dark hue). Place fillets in a single layer in the marinade, turning to coat both sides. Let rest 15 minutes in the refrigerator—do not marinate much longer because citrus will begin to cure the delicate flesh.

    Before cooking, remove fillets from the fridge and let them come close to room temperature for 10 minutes. Brush off any excess marinade if pooling; leave the charcoal coating evenly on the surface for the ‘charcoal’ appearance. Finish with a light brush of olive oil (1 tsp) just before searing or grilling.

Cauliflower & Kale Vadouvan (vegetable component)

    Sauté aromatics

    Heat 1 tbs neutral oil in a wide sauté pan over medium heat. Add the diced onion (1/2 cup) and cook until translucent and beginning to color, about 5–6 minutes. Add the minced garlic (1 tsp) and ginger (1/2 tsp) and cook until fragrant, about 30 seconds.

    Cook cauliflower

    Add the cauliflower florets (300 g) and toss to coat with the aromatics. Cook, stirring occasionally, until edges begin to brown, about 6–8 minutes.

    Add vadouvan and liquids

    Stir in 1.5 tbs Vadouvan paste (or powder) and cook 1 minute to bloom the spices. Add the coconut milk (100 ml) and vegetable stock (50 ml). Bring to a gentle simmer, cover and cook 6–8 minutes until cauliflower is tender but not mushy.

    Finish with kale and seasoning

    Uncover, add the torn kale leaves (150 g) and continue to cook 2–3 minutes until kale is wilted. Stir in lemon zest (1 tsp), salt (3/4 tsp) and black pepper (1/4 tsp). Adjust seasoning to taste. Keep warm while you cook the fish.

Zucchini Flowers & Garnish

    Prepare flowers

    Gently open each zucchini flower and check for any remaining pistils; remove if present. If using the ricotta filling, mix ricotta (60 g) with 1/2 tsp lemon zest and 1/4 tsp salt. Using a small spoon or piping bag, gently fill flowers with about 1 tsp of ricotta mixture and twist the tip closed. If not filling, simply leave flowers whole and delicate.

    Dress flowers

    Arrange flowers on a plate and very lightly drizzle with extra virgin olive oil (1 tsp) and a tiny pinch of smoked sea salt or finishing salt. Keep at room temperature; they will be added to the plate at service.

Charcoal Finish & Rack Assembly

    Prepare smoke or hot plank

    If using a small smoker or a charcoal plank, preheat it according to manufacturer instructions so it gives a short, hot burst of smoke (or prepare a very hot grill). If you don't have planks, you can sear the fish in a heavy skillet and finish with a quick sprinkle of smoked sea salt to evoke a smoky profile.

    Cook the flounder

    Heat a large nonstick or cast-iron skillet over medium-high heat until shimmering. Add a thin film of oil if needed. Place flounder fillets charcoal-side down and sear undisturbed for 2–3 minutes until the edge cooks through and the surface forms a set crust. Flip carefully and cook an additional 1–2 minutes until opaque and just cooked through (internal temp ~55–60°C / 130–140°F). Total cook time will be short because flounder is thin—avoid overcooking.

    Optional quick smoke

    After searing, transfer fillets briefly to the preheated plank or under a covered smoker for 3–4 minutes to pick up a light smoky note and plank aroma. Alternatively, lay fillets on a rack and pass a small, lit charcoal chip smoked briefly in a smoker box over them then cover to trap smoke for 1–2 minutes. This step is optional but enhances the ‘charcoal’ theme.

    Finish

    Brush each finished fillet with a little melted butter (1 tbsp total, divided) and a small sprinkle of smoked sea salt (1/2 tsp) to brighten flavors. Squeeze a little lemon over each if desired.

    Assemble rack/plate

    Spoon a generous bed of the cauliflower & kale vadouvan in the center of each plate. Lay the charcoal-coated flounder fillet across the bed to create the ‘rack’ presentation. Tuck 2 zucchini flowers per plate alongside the fish. Scatter microgreens or torn parsley (10 g) and a pinch of crispy fried shallots (optional) over the vegetables and fish for texture. Serve immediately with lemon wedges.
