Sushi Rice & Seasoning

Rinse and cook rice
Rinse 2 cups short-grain sushi rice under cold water in a fine-mesh strainer until the water runs almost clear (about 4–5 rinses). Drain 10–15 minutes. Combine the rinsed rice and 2.25 cups water in a rice cooker or a heavy pot. Cook according to rice cooker instructions or bring to a boil, then reduce to low, cover, and simmer 12–14 minutes. Remove from heat and let rest, covered, 10 minutes.

Season the rice
While the rice cooks, warm 3 tablespoons rice vinegar, 1.5 tablespoons sugar, and 1 teaspoon fine sea salt in a small saucepan just until the sugar dissolves (do not boil). Transfer the hot cooked rice to a large, shallow nonreactive bowl. Pour the vinegar mixture evenly over the rice and fold gently with a wooden spatula or rice paddle to incorporate and cool quickly. Fan the rice or let it sit uncovered until it reaches room temperature (about 15–20 minutes). Cover with a damp towel to keep moist until assembly.

Prepare fillings: shred or flake the 8 oz imitation or real crab, julienne the cucumber into thin batons and remove seeds, slice the 2 avocados thinly (toss slices lightly with a tiny splash of rice vinegar or lemon to prevent browning if desired). If you don’t have pre-cooked tempura shrimp, make or buy tempura shrimp and cook according to package instructions; trim tails if they are too long to roll.

Lay out a bamboo mat covered with a sheet of plastic wrap to prevent rice sticking. Place one nori sheet shiny side down on the plastic. With wet hands, spread an even layer of sushi rice over the nori, leaving a 1-inch (2.5 cm) strip at the far edge clear of rice.

Lift the edge of the bamboo mat and begin rolling away from you, using your fingers to tuck the fillings and keep pressure even. Roll firmly but gently to form a compact cylinder. Seal the far rice-free nori edge with a little water. Repeat to make 3 more rolls (total 4 rolls).

Make Godzilla sauce: in a small bowl combine 1/2 cup Japanese mayonnaise and 2 tablespoons sriracha; stir until smooth. Taste and adjust heat. Stir in 1 teaspoon wasabi if you want extra heat and a horseradish note. Reserve about 3 tablespoons of the sauce for serving.

Finish rolls: place each roll seam-side down and use a very sharp, wet knife to slice each roll into 8 pieces (wet the knife between cuts to prevent sticking). Arrange pieces on a serving platter in rows.

Top each piece: pipe or spoon a small dollop of the spicy mayo onto the center of each sushi piece. Drizzle 3 tablespoons unagi sauce across the top of the rolls for a sweet, glossy finish. Sprinkle 2 tablespoons masago (or tobiko) and 1 tablespoon toasted sesame seeds evenly over the rolls, then scatter 2 tablespoons sliced scallion over everything for brightness.

Optional broil (charred godzilla effect): for a lightly charred finish, arrange the sauced rolls under a preheated broiler or use a kitchen torch. If broiling, place rolls on a foil-lined tray and broil 10–25 seconds—watch carefully so mayo just browns and bubbles, do not burn. If using a torch, hold flame 6–8 inches away and torch briefly until the mayo blisters.

Plate the sushi: garnish with pickled ginger and serve soy sauce on the side. Serve immediately for best texture and temperature.
