Prepare seafood
If using pre-cooked lobster/crab and shrimp, ensure they are chilled and thoroughly drained. Pat the pieces dry with paper towels. Chop the lobster or crab into 1/2-inch chunks and roughly chop the shrimp so pieces are bite-sized but still chunky.

In a mixing bowl combine 1/4 cup mayonnaise and 2 tablespoons Greek yogurt. Whisk in 1 tablespoon fresh lemon juice, 1/2 teaspoon Dijon mustard, 1/4 teaspoon Old Bay seasoning, 1/4 teaspoon salt, and 1/8 teaspoon freshly ground black pepper until smooth.

Fold in the chopped lobster (or crab) and chopped shrimp gently until coated. Add 2 tablespoons very finely diced celery, 1 tablespoon thinly sliced green onion, 1 teaspoon chopped fresh parsley and 1 teaspoon chopped chives (if using). Taste and adjust seasoning — add a pinch more salt or a few drops more lemon juice if needed. Refrigerate the mixture while you prepare rolls, at least 10 minutes to let flavors marry.

In a small bowl, combine 2 tablespoons softened unsalted butter with 1/2 teaspoon olive oil (optional, helps browning). Spread a thin even layer of the butter mixture on the cut interior faces of each roll.

Place rolls cut-side down on the preheated skillet and toast until golden brown and crisp, about 1.5–2.5 minutes. If using the broiler, place rolls on a baking sheet cut-side up and broil 1–2 minutes, watching carefully to avoid burning. Remove and sprinkle a light pinch (about 1/8 tsp total) of sea salt over the toasted surfaces.

Divide the chilled crustacean filling evenly among the 4 toasted rolls (about 1/4 cup filling per roll). Pile the mixture gently so chunks remain intact for texture.

Top each filled roll with a small handful (about 1 tablespoon) of microgreens or baby lettuce if using. Sprinkle a tiny pinch of smoked paprika over the filling for color and a subtle smoky note.
