1. Chill bottle

Refrigerate the bottle of Dulce Enero ice wine for at least 2–3 hours before serving. Aim for a serving temperature of 6–8°C (43–46°F). If short on time, place the bottle in an ice bucket with equal parts ice and water for 20–30 minutes.

2. Decanting (optional)

Ice wines are usually enjoyed directly from the bottle without extended decanting. If sediment is present (rare for a modern ice wine), gently stand the bottle upright for 30 minutes and pour slowly to avoid disturbing any deposit.

3. Pouring

Pour small tasting portions—about 60–100 ml (2–3.5 fl oz) per glass—into appropriate stemmed dessert wine or white wine glasses. Fill no more than one-quarter to one-third of the glass to concentrate the aromatics.

4. Tasting order

Serve first to enjoy the primary floral and fruit aromas. Encourage guests to note appearance (deep golden-amber color), swirl gently to release aromatics, then sniff and take a small sip. Allow the wine to coat the palate to appreciate the balance of sweetness, acidity and any noble rot characteristics.

Arrange the cheeses, quince paste slices, nuts and fresh fruit on a serving board. Keep cheeses at room temperature (remove from refrigerator ~20–30 minutes before serving) to allow aroma and texture to open.

Taste the wine with each pairing element to explore contrasts: try a sip of wine followed by a small piece of aged Manchego to see savory and nutty interplay; combine a bite of blue cheese with the wine to highlight saltiness against the wine's residual sugar; match soft creamy cheese and honey for a luscious, harmonious mouthfeel; eat quince paste with Manchego for a classic Spanish sweet-salty combination. Nuts and fresh fruit refresh the palate between tastings.

7. Palate cleansing

Provide plain water and neutral crackers or bread to cleanse the palate between samples so the ice wine’s flavors remain distinct.

8. Storage after opening

Recork the bottle and refrigerate. Ice wine will keep refrigerated for 5–7 days; flavors may mellow but remain enjoyable for several days. Consume within a week for best expression.
