    Prepare filling

    In a large bowl combine ground pork, chopped green onions, grated ginger, minced garlic, soy sauce, sesame oil, Shaoxing wine, salt, white pepper, beaten egg, and diced water chestnuts (if using). Mix thoroughly with a spatula or spoon until the mixture is sticky and well combined (about 1–2 minutes). Cover and refrigerate for 20–30 minutes to allow flavors to meld; chilling also firms the filling and makes wrapping easier.

    Assemble dumplings

    Set up a workstation with wrappers, a small bowl of water, and the chilled filling. Place one wrapper on your palm or flat surface. Spoon about 1 level tablespoon (approximately 15 g) of filling into the center of each wrapper. Dip your finger in water and moisten the wrapper edge. Fold the wrapper over the filling to create a half-moon or round pouch; press out air and seal edges firmly. Optionally pleat the edges for a traditional look. Repeat until all filling is used (should yield ~35–40 dumplings). Keep finished dumplings covered with a damp towel to prevent drying.

    Pan-fry and steam (potsticker style)

    Heat a large nonstick or cast-iron skillet over medium-high heat and add 2 tbs vegetable oil, swirling to coat. Arrange dumplings in a single layer, flat side down, not touching. Fry for 1–2 minutes until bottoms are golden brown. Carefully pour 1/2 cup water into the pan (it will sizzle), immediately cover with a tight-fitting lid, reduce heat to medium-low, and steam for 5–6 minutes until wrappers become translucent and pork is cooked through (internal temperature 160°F/71°C). Remove lid and continue cooking 30–60 seconds to re-crisp bottoms. Transfer dumplings to a warm plate and keep covered while you make the sauce.

    Alternative: Boil or steam only

    To boil: bring a large pot of water to a gentle boil, add dumplings in batches to avoid crowding, stir gently to prevent sticking; cook 4–6 minutes until they float and are cooked through. To steam: arrange dumplings in a single layer in a lined bamboo or metal steamer and steam over simmering water for 8–10 minutes. Adjust as needed for wrapper thickness.

Truffle mushroom sauce

    Cook mushrooms

    In a medium skillet over medium heat, melt 2 tbs butter with 1 tbs olive oil. Add minced shallots and sauté 1–2 minutes until translucent. Add chopped cremini and shiitake mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 6–8 minutes. Add 1 tsp minced garlic and cook 30 seconds until fragrant.

    Deglaze and simmer

    Pour in 1/4 cup dry white wine (or 1/4 cup stock) to deglaze the pan, scraping up browned bits. Simmer for 1–2 minutes until mostly evaporated. Add 1 cup low-sodium chicken or vegetable stock and bring to a gentle simmer. Reduce heat and simmer 4–5 minutes to concentrate flavor.

    Finish sauce

    Lower heat to medium-low. Stir in 1/2 cup heavy cream and 1 tsp chopped thyme. Simmer gently 2–3 minutes until slightly thickened. Taste and season with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat and stir in 1 tsp black truffle oil and 1/2 tsp lemon juice if using. If you prefer a smoother sauce, blend briefly with an immersion blender or transfer half the sauce to a blender and puree, then return to the pan and combine.

Garnish & serving

    Arrange warm dumplings on a serving platter or individual plates. Spoon a generous ladle of warm truffle mushroom sauce over or beside the dumplings. Garnish with chopped parsley or chives and drizzle an additional 1/2 tsp truffle oil if desired. Serve immediately.
