Garlic Ponzu Sauce

Prep & Slicing

Chill and slice yellowtail
Place the yellowtail in the coldest part of the refrigerator for 15–20 minutes to firm up for cleaner slicing. Using a very sharp long, thin knife, slice the yellowtail crosswise into 1/8"–1/4" (3–6 mm) thin sashimi-style slices. Arrange slices in a single layer on a chilled platter, slightly overlapping.

Prepare jalapeño and garlic
Thinly slice the jalapeño into rounds (remove seeds for less heat). If using fresh garlic, very thinly mince or smash and finely grate to yield about 1/2 tsp; alternatively use pre-made garlic chips—toast 1 tbsp thin garlic slices in 1 tsp oil over medium heat until golden and crisp. Set jalapeño slices and garlic aside.
Make Garlic Ponzu Sauce

In a small bowl, combine 1/4 cup ponzu, 1 tsp light soy sauce, 1 tbsp fresh lime juice, 1 tsp mirin, 1/2 tsp freshly grated garlic, 1 tsp neutral oil, and 1/4 tsp sugar or honey if using. Whisk until sugar dissolves. Taste and adjust: add a touch more lime for acidity, a few drops of soy for saltiness, or a pinch more sugar for balance. Finish with a pinch of freshly ground black pepper.

Let the sauce sit for 5 minutes to meld flavors. If using garlic chips, you may reserve a few to crisp-top the finished dish.
Assemble & Serve

Just before serving, spoon or lightly drizzle about 1 to 1 1/2 teaspoons of the garlic ponzu onto each yellowtail slice (or drizzle across the arranged slices). Avoid soaking the fish; the sauce should lightly coat each piece.

Top each slice with a jalapeño round (use half rounds or small slivers for milder heat), a few cilantro leaves, and a sprinkle of toasted sesame seeds. Scatter thin garlic chips or minced garlic sparingly across the fish for bright garlicky notes.

Garnish optionally with microgreens or baby mizuna and serve immediately so the fish remains chilled and the jalapeño crisp.
