Prepare the Tuna
Using a sharp knife, cut the sushi grade tuna into small cubes, approximately 1/2 inch in size. Ensure that the knife is clean to avoid any contamination.

Chop Green Onions
Finely chop the green onions, separating the green tops from the white ends.

Grate the Ginger
Using a microplane or a fine grater, grate the fresh ginger to yield about 1 teaspoon.
Mixing Ingredients

Combine Tuna and Avocado
In a medium mixing bowl, gently combine the cubed tuna and avocado, being careful not to mash the avocado.

Add Seasoning
Pour in the soy sauce and sesame oil over the tuna and avocado mixture. Add the grated ginger and chopped white parts of the green onions. Gently fold the mixture until evenly coated.

Finish with Sesame Seeds
Sprinkle the sesame seeds over the mixture and fold gently to incorporate.

Plate the Tartare
Using a ring mold or a small bowl, carefully pack the tuna tartare mixture into a serving dish to create a nice presentation.

Top the tartare with the green tops of the chopped green onions and a handful of microgreens, if using.

Serve the tuna tartare with tortilla chips or wonton crisps on the side for scooping.
