Preparing the Potatoes
Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Drain and Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.
Toss with Olive Oil and Seasonings
In a large bowl, combine the dried potato strips with olive oil, salt, and black pepper. Toss until the potatoes are evenly coated.
Baking and Final Touches
Bake the Fries
Spread the potato strips in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
Prepare the Herb and Cheese Mixture
While the fries are baking, mix together the grated Parmesan cheese, chopped rosemary, and parsley in a small bowl.
Add the Herb and Cheese Mixture
Once the fries are done baking, remove them from the oven and immediately sprinkle the herb and cheese mixture over the hot fries. Toss gently to combine.
Serve
Transfer the Rusty Fries to a serving platter and enjoy them hot as a delicious side dish or snack.
