Method

For the Spicy Tuna Roll

    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions and let it cool to room temperature.

    Prepare Tuna Mixture

    Dice the fresh tuna and mix it with Sriracha sauce, soy sauce, and sesame oil in a bowl. Adjust seasoning to taste.

    Assemble the Roll

    Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Add a line of the tuna mixture and sliced avocado. Roll tightly and slice into 6-8 pieces.

For the Citrus Cream

    Prepare Citrus Cream

    In a mixing bowl, combine the cream cheese, lemon juice, lime juice, and honey. Mix until smooth and well blended. Adjust the sweetness with more honey if desired.

For the Pickled Serrano and Ginger Dressing

    Prepare Pickled Dressing

    Slice the serrano peppers thinly and grate the fresh ginger. In a small bowl, mix together the rice vinegar, sugar, salt, serrano peppers, and ginger. Let it sit for at least 30 minutes to pickle.

For the Green Papaya and Mint Slaw

    Prepare Slaw

    Using a julienne peeler or a knife, julienne the green papaya and carrots. In a large bowl, combine the papaya, carrots, and mint leaves. Drizzle with lime juice and fish sauce, then toss to combine.
