Method

Preparation

  1. 1

    Season the Ribeye

In a small bowl, combine kosher salt, freshly ground black pepper, garlic powder, and smoked paprika. Rub this mixture evenly all over the ribeye steak, ensuring it is well-coated on all sides.

  2. 2

    Let it Rest

Allow the seasoned ribeye to sit at room temperature for about 30 minutes. This will help the steak cook more evenly.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over high heat until it is very hot. This may take about 5-7 minutes.

  2. 4

    Add Olive Oil

Once the pan is hot, add the olive oil and swirl it around to coat the bottom of the pan evenly.

  3. 5

    Sear the Ribeye

Carefully place the ribeye into the hot pan. Sear the steak for about 4-5 minutes on one side without moving it, until a crust forms.

  4. 6

    Flip and Cook

Flip the ribeye using tongs and cook for another 4-5 minutes for medium-rare, or adjust the time according to your preferred doneness.

  5. 7

    Add Butter and Herbs (Optional)

In the last minute of cooking, add a tablespoon of butter and a sprig of fresh rosemary to the pan. Baste the ribeye with the melted butter and herbs for extra flavor.

Resting

  1. 8

    Rest the Steak

Remove the ribeye from the pan and place it on a cutting board. Allow it to rest for at least 5-10 minutes before slicing. This helps redistribute the juices.

Serving

  1. 9

    Slice and Serve

Slice the ribeye against the grain and serve it warm. Enjoy your perfectly cooked Pure Black Australian Ribeye!
