Wasabi Sticky Rice

Method

Prepare the Wasabi Sticky Rice

  1. 1

    Rinse the Sushi Rice

Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and helps achieve the right texture.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until all the water is absorbed and the rice is tender.

  3. 3

    Season the Rice

In a small bowl, combine rice vinegar, sugar, salt, and wasabi paste. Microwave for about 20 seconds to dissolve the sugar and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare the Fish Topping

  1. 4

    Slice the Fish

Using a sharp knife, slice the Atlantic salmon or Ahi tuna into thin, even pieces (about 1/4 inch thick). Ensure your knife is wet for cleaner cuts.

  2. 5

    Plate the Nigiri

Wet your hands with water to prevent sticking. Take a small amount of the wasabi sticky rice (about 2 tablespoons) and form it into an oval shape. Place a slice of fish on top of the rice. Repeat with the remaining ingredients.

Serve

  1. 6

    Serve with Condiments

Arrange the nigiri on a platter and serve with soy sauce, pickled ginger, and additional wasabi on the side for dipping.
