Crust Preparation

Preheat the oven
Preheat your oven to 350°F (175°C).

Mix crust ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until well combined.

Form the crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust.

Bake the crust
Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and allow to cool slightly.
Filling Preparation

Combine filling ingredients
In a mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth.

Fill the crust
Pour the filling mixture into the cooled graham cracker crust, spreading it evenly.

Bake the filling
Return the pie to the oven and bake for an additional 15 minutes. Remove from the oven and let it cool to room temperature.

Chill the pie
Refrigerate the pie for at least 3 hours, or until set.

Whip the cream
In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip until soft peaks form.

Spread or pipe the whipped cream over the chilled key lime pie.

Slice the pie and serve cold, garnished with additional lime slices if desired.
