    Prepare the Marinade

    In a bowl, combine olive oil, lime juice, garlic powder, paprika, salt, and black pepper. Mix well to create a marinade.

    Marinate the Fish

    Place the Mahi Mahi fillets in the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Remove the fillets from the marinade and place them on the grill. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.

Cilantro Lime Rice

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the long-grain rice and 1 tsp of salt. Reduce the heat, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.

    Add Cilantro and Lime

    Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro and lime juice.

Mango Salsa

    Prepare the Salsa

    In a bowl, combine the diced mango, finely chopped red onion, minced jalapeño, chopped cilantro, lime juice, and salt to taste. Mix gently to combine.

    Let the salsa sit for about 10 minutes to allow the flavors to meld. Serve it fresh with the grilled Mahi Mahi and cilantro lime rice.
