For the Calamari

Prepare the Calamari
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Soak the Calamari
Pour the buttermilk over the cleaned squid rings and let them soak for about 30 minutes at room temperature.

Dredge the Calamari
Remove the squid from the buttermilk, allowing excess to drip off, and then dredge thoroughly in the flour mixture. Set aside on a plate.

Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the dredged calamari in batches to the hot oil, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes and Spices
Stir in the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring to a simmer.

Simmer the Marinara
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Stir in the fresh basil just before serving.
