Cake Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder, tapping out the excess. This will help the cakes release easily after baking.

    Melt the Chocolate and Butter

    In a medium saucepan over low heat, combine the bittersweet chocolate and unsalted butter. Stir frequently until melted and smooth. Remove from heat and let it cool slightly.

    Combine Dry Ingredients

    In a separate bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

    Mix Wet Ingredients

    In another bowl, whisk together the eggs, egg yolk, and vanilla extract until well blended.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg mixture, stirring constantly. Gradually fold in the dry ingredients until just combined. Be careful not to overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake the Cakes

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool and Serve

    Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto plates. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream and fresh berries.
