Method

Preparing the Sea Bass

    Season the Fish

    Pat the Chilean sea bass fillets dry with paper towels. Season both sides of the fillets with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Sea Bass

    Carefully place the seasoned sea bass fillets in the skillet, skin-side down if applicable. Cook for about 4-5 minutes per side, or until the fish is golden brown and flakes easily with a fork. Remove from the skillet and keep warm.

Making the Saffron-Citrus Butter Sauce

    Melt the Butter

    In the same skillet, reduce the heat to medium and add the unsalted butter. Allow it to melt completely, scraping up any browned bits from the bottom of the pan.

    Add Saffron and Garlic

    Once the butter has melted, add the pinch of saffron threads and minced garlic. Stir continuously for 1-2 minutes until fragrant.

    Incorporate Citrus Juices

    Stir in the fresh orange juice and lemon juice, mixing well. Let the sauce simmer for another 2-3 minutes to combine the flavors.

    Finish the Sauce

    Remove the skillet from heat and stir in the chopped parsley for freshness. Adjust seasoning with salt and pepper to taste.

Serving

    Plate the Dish

    Place a piece of the cooked Chilean sea bass on each plate and drizzle generously with the saffron-citrus butter sauce.

    Garnish with additional parsley if desired and serve immediately.
