Preparing the Fries

Cutting the Potatoes
Wash and peel the Yukon Gold potatoes. Cut them into long, thin strips, approximately 1 cm wide.

Drying the Potatoes
After soaking, drain the potatoes and pat them dry thoroughly with a kitchen towel to remove any moisture.

Frying the Potatoes
In a large pot, heat the vegetable oil to 180°C (350°F). Carefully add the dried potato strips in batches and fry for about 5-7 minutes or until golden brown and crispy.

Salting the Fries
Remove the fries from the oil and drain them on paper towels. While they are hot, sprinkle with sea salt to taste.
Making the Ranch Dressing

Mixing Ingredients
In a medium bowl, combine the mayonnaise, sour cream, dried dill, garlic powder, onion powder, and lemon juice.

Seasoning
Add salt to taste and mix until all ingredients are well combined. Adjust the seasoning as needed. Refrigerate until ready to serve.
Preparing Caviar and Serving

Making Vodka Crème Fraîche
In a small bowl, mix the crème fraîche with vodka until smooth. This will give a nice tangy flavor to the crème fraîche.

Plating the Dish
On a serving platter, arrange the crispy fries. Spoon the vodka crème fraîche over the fries, then top with caviar and sprinkle with chopped fresh chives.

Serve immediately with the ranch dressing on the side for dipping.
