Calamari Preparation

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold water until the batter is smooth and has a slightly thick consistency.

Heat Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dip the calamari rings into the batter, ensuring they are fully coated.

Fry the Calamari
Carefully lower the battered calamari into the hot oil in batches, frying for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

While the calamari is frying, slice the bell peppers and onion into thin strips.

Mix Aioli Ingredients
In a small bowl, combine the mayonnaise, hot sauce, lemon juice, minced garlic, salt, and black pepper. Mix well until smooth and creamy.

Taste the aioli and adjust seasoning if necessary, adding more hot sauce for heat or salt to taste.
