Spicy Marinara Sauce
Method
Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water. Cut the bodies into rings and leave the tentacles whole. Pat dry with paper towels.

Prepare the Breading
In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk the egg and milk together.

Coat the Calamari
Dip the calamari rings and tentacles into the egg mixture, then dredge them in the flour mixture until well coated.
Frying the Calamari

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they turn golden brown.

Drain the Calamari
Use a slotted spoon to remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.
Making the Spicy Marinara Sauce

Add Tomatoes and Spices
Add the canned crushed tomatoes, red pepper flakes, oregano, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Stir in the chopped basil before serving.
Serving

Plate the Calamari
Serve the fried calamari hot with a side of the spicy marinara sauce for dipping.
