Method

Preparation

  1. 1

    Prepare the Steak

Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes before cooking. This ensures even cooking.

  2. 2

    Season the Steak

Pat the filet mignon dry with paper towels. Sprinkle kosher salt, freshly ground black pepper, and garlic powder evenly on both sides of the steak.

Cooking

  1. 3

    Heat the Pan

In a heavy skillet or cast iron pan, heat the olive oil over medium-high heat until it shimmers. Make sure the oil is hot before adding the steak.

  2. 4

    Sear the Steak

Carefully place the seasoned filet mignon into the hot pan. Sear for about 4-5 minutes on the first side without moving it to achieve a nice crust.

  3. 5

    Flip the Steak

Using tongs, flip the steak over and sear the other side for another 4-5 minutes for medium-rare. Adjust the time according to your desired doneness.

  4. 6

    Add Optional Ingredients

If using, add butter and fresh rosemary to the pan during the last minute of cooking. Tilt the pan and spoon the melted butter over the steak for added flavor.

  5. 7

    Rest the Steak

Remove the filet mignon from the pan and let it rest on a plate for at least 5 minutes before slicing. This helps retain the juices.

Serving

  1. 8

    Slice and Serve

Slice the filet mignon against the grain and serve it with your favorite side dishes. Enjoy your perfectly cooked Bass Strait Filet Mignon!
